Making ginger jam for lunar New Year
VietNamNet Bridge – The lunar New Year is adjacent. Hundreds of enterprises in Quang Ngai City and other localities are in a hurry to produce ginger jam to serve northern customers.
|Fresh ginger is transported from the Central Highlands to jam producing enterprises in Quang Ngai City. Mr. Vo Huu Kha said he has transported fresh ginger and scraped
ginger for jam producing enterprises for more than 20 years. This
vehicle can carry 300kg of ginger.|

Ms. Nguyen Thi Thanh in Tran Hung Dao Ward, Quang Ngai city rents a
plot of land near Quang Ngai temporary market for processing ginger jam
for the Lunar New Year.
|After being cut into slices, ginger is washed and boiled in large pots for more than one hour.|
|After that, ginger is put into pans, mixed with sugar, and simmered for 3 hours.|
|Employees who simmer ginger jam earn from VND200,000 to VND250,000 ($10-12) per day.|
|After this step, ginger is poured out into flat baskets for sugar mixing and drying.|
|With over 15 years of processing ginger jam for lunar New Year, Ms.
Do Thi Minh Tam from Village 2, Nghia Dong commune, Quang Ngai city said
that her enterprise supplies about 15 tons of ginger jam each Tet.
"This year, the cold weather is forecasted to last until the Tet holiday
so my enterprise processes about 20 tons of ginger jam, employing 30
workers," Tam said.|
|Ginger jam is boxed. One kilo of ginger jam is priced from VND35,000
to VND40,000. Each enterprise can earn profit from VND15 to VND20
million for nearly one month.|
